Elderflower Cordial

1.5 kg   Granulated sugar
2          Lemons
25        Heads of Elderflower
50g      Citric Acid
2          Campden Tablets
1.5 Ltr  Water
 

1. Put the sugar and water in  large pan and bring to the boil
2. Stir until the sugar dissolves and then leave to cool
3. Thinly slice the lemons and place in a bucket with the citric acid and elderflower heads
4. Pour the cooled sugar water over the elderflowers into the bucket.
5. Cover and leave in a cool place overnight or up to 3 days.
6. Sieve and strain through muslin into sterilized bottles
7. Store in the fridge or partially fill plastic bottles and place in the freezer
8. To serve dilute with still or sparkling water

 
NB  Make sure that the flowers are all fully open when you collect them.  Also avoid any flowers that have any sign of brown petals.
