Winning recipe of this year’s Heffle Bake Off
Lemon and Orange Drizzle Cake

For the Cake
115gr softened butter 75gr icing sugar
175 gr caster sugar Juice of 1 lemon
2 large eggs Juice of 1 orange
175gr self-raising flour
Pinch salt
For the Syrup
Grated zest of 1 lemon
Grated zest of ½ large orange
4 tablespoons milk
1 teaspoon of orange extract

1. Put all the cake ingredients into a bowl and whisk until smooth
2. Turn into a greased and lined 1kg cake time and smooth the top
3. Bake in a preheated oven 160ºc Fan/Gas mark 4 for 45 minutes
4. Remove from the oven and place on a cooling wire whilst still in
the tin
5. Make the syrup. Gently heat the icing sugar and the orange and
lemon juice n a saucepan, whilst stirring to dissolve the sugar, until
syrupy
6. Prick the warm cake all over with a fork and gently pour the syrup
over the top
7. Leave until the cake is cold, then turn out of the time.
8. Serve sprinkled with icing sugar and thin strips of orange and lemon zest.
